So after talking w/ MSi I was able to get a Beta Bios that solves this issue. Here are the steps to get the NVMe m.2 raid going and become bootable.
1. You need to make a folder and put the beta bios inside it. I named my folder Beta Bios.
2. Put the folder on a USB drive and flash the motherboards Bios with the new "Beta Bios"
3. Do the steps in the first video "MSI® HOW-TO Setup X399 NVME M.2 RAID."
