I have been looking around looking for some kind of solution to add an external gpu for my laptop. I don't necessarily need anything powerful, and I'm not worried about the bottlenecks that go along with connecting a graphics card via usb c, I just want something, as my computer uses intel onboard graphics. I have done extensive searching and I wondered if anyone here had any success with finding any usb c to pcie adapters to hook up a graphics card with.

USB doesn't have nearly enough bandwith for this, only Thunderbolt has enough bandwith, and even then it's not enough to get 100% performance out of it.
