Chances are you'll have some hits from non allowed countries so it should show in the logs (my logs are full of them). You might need to enable logging on the deny policy for it to show though.

 

PS, if you want to see which country the FortiGate senses as the country you can use this command:

JTFORTIGATE # diagnose firewall ipgeo ip2country X.X.X.X (replace with the IP)
