Sketch M.2 RAID

So we are replacing some M.2 Drives in some laptops at my work. I will get the old ones, and I want to put them to use.
Im thinking a RAID 0. (They are like 128Gb a peice). They would be for boot. The issue is, my motherboard only has one M.2 slot. Will everything work fine if I just use a SATA to M.2 Adapter? The drives are only 600Mbps but idk
