I'm a bit confused with the question. If you upload a file to google docs and try to edit it, it is converted to whatever the Google docs format is. The .docx that is there is just copied from the file name. If you try to download that file as a docx you will find the file becomes .docx.docx

No, .doc/.docx files are limited to basic functions like text editing until you convert them to a google docs file.

To the OP, if you go to the settings in the top right, it gives you this option:

That should work.

Is there a way to upload .docx, .pptx and .xlsx files and have them automatically converted to the respective Google Drive formats?

Eg. I uploaded this document, right-clicked, and chose Open with Docs

They are converted when you want to edit them in google docs. If you open them with out doing the auto convert it opens as just a reader. But if you click this button at the top it is automatically converted and you get full functionality

Why not use OneDrive? You have free Word, Excel, PowerPoint, and OneNote, and like Google Drive, it supports multiple user document edit with live update, like this you don't need to convert your stuff, and break formatting, and loose content due to unsupported features.
