If you're able to configure two drives in RAID 0 and install windows on it, then it will stripe your data across both disks and utilize both to load data when booting.

I actually couldn't underclock my 5 year old GPU to make it as slow as a next-gen console.

It is possible to boot from a RAID array. In order to do that your motherboard needs to support hardware RAID arrays or you would need a RAID controller card. 
Check the manual of your motherboard and see if it does support RAID and booting from it and if it has a guide on how to properly configure your settings (AHCI/IDE to RAID, boot order, etc.). Do have in mind that any drive that is put into a RAID array is being formatted and thus the data from it is wiped. 
It is also advisable to use NAS/RAID-class drives for maximum safety and lowest chance of drive dropouts. I could suggest checking out WD Red as a possible solution for this: http://products.wdc.com/support/kb.ashx?id=F7iN1A
