Nvidia Surround Ultra Wides

Can you do Nvidia Surround with 3 ultra wide monitors? 21*9 times three?

Yes. However, surround is a bit picky with 3x1080p monitors, it's even worse with 3 UltraWides.

Depends on the game. Some will support it, and some won't (most won't). I really wouldn't recommend it, it's hard to run and most of the time will not work. I'd just go for a single ultrawide with other, smaller monitors on the side.
