I have a Sapphire HD 7950 Boost edition (DVI-I, DVI-D, HDMI, Displayport).

 

I have 2 vga led screen in the following setup: 

- 1 monitor on the DVI-I using a DVI to vga adapter

- 1 monitor on the Displayport using a displayport to vga adapter (this one: http://www.alternate.be/Club-3D/Adapter-Mini-DisplayPort-HDMI/html/product/1101197)

 

Now I want to buy a third monitor pref one with HDMI so I can attach it to my raspberry pi when needed.

Can this work cause I heard somewhere that you can only use 2 monitors when using adapters?

The rule is you can only run up to two displays from the DVI/HDMI controller. DisplayPort-to-DVI/HDMI adapters also won't help because those also leverage the DVI/HDMI controller to work.

 

Since you're using VGA/DP for your displays you can still connect up to two more displays via DVI/HDMI.
