Just weigh in guys. Advantages and disadvantages of each and why I should go with one over the other. thank y'all :)

I am a member of the PCMasterRace. I am terribly sad to announce that I own a PeasantStation 3 Super Slim. it's in a drawer away from my glorious PC.

Have a look at this thread. Looks like it has some good info in it.

I planned a D5 Vario for my build, seems to be the better option from what I have read from a lot of top builders.

Would a D5 be enough to cool three video cards and cpu?

It'll be more than enough. You might need to push the pump to a higher flow rate, but if you use vibration isolation on the pump mount, it shouldn't be any more noisy once all the air is out of the loop. I've turned my D5 up to level 4 during bleeding (currently at a little under 3, I think) and once the air was gone, the fans were actually louder than the pump.

Wife's build: Amethyst - Ryzen 9 3900X, 32GB G.Skill Ripjaws V DDR4-3200, ASUS Prime X570-P, EVGA RTX 3080 FTW3 12GB, Corsair Obsidian 750D, Corsair RM1000 (yellow label)

My build: Mira - Ryzen 7 3700X, 32GB EVGA DDR4-3200, ASUS Prime X470-PRO, EVGA RTX 3070 XC3, beQuiet Dark Base 900, EVGA 1000 G6

Yup get the variable speed one I made the mistake of getting the set speed and it's the loudest thing in my build hopefully I will get it replaced some time soon and keep the old one as a backup.

I am the one who goes bump in the night... usually making a sandwich.

Case: Phanteks Enthoo Primo White - Motherboard: ASUS X99 Deluxe - CPU: Intel i7 5820k - RAM: 4x4GB Corsair Vengeance 2666mhz ddr4 - GPU: Dual EVGA gtx 980 SSC - PSU: EVGA G2 Supernova 750w - Cooler: Custom PETG Loop on cpu and gpus - Storage: 500gb Samsung 850 evo ssd, 2x Seagate Barracuda 7200rpm 3tb hdd

As others have said most people go with D5's instead of DDC. Also should note that D5's are cooled by your loop and thus dump a little extra heat into it where as DDC require passive cooling with a heat sink and can also add active cooling with a fan on top of that. DDC's are considered louder as well but are a little more compact than a D5 if space is REALLY tight.

One D5 is pretty much enough for any normal loop that you would consider building. Some people do add another mainly providing redundancy so you dont have a single point of failure.

I havent used a fixed speed D5 but I have used multiple vario and PWM models. I would definitely say go with vario not PWM. I actually have swapped back to vario D5's as my 2 PWM ones were just a giant PITA, especially for bleeding as you need to be at least in the bios to get them to run at full speed (4800rpm) which as everyone knows is a big no no when leak testing and bleeding for obvious reasons. I also had issues with getting the pumps to hold speed settings after reboots/re-detection and even times where I couldnt even detect them in applications at all other than their RPMs (may just have been my rog formula 7 and ASUS' terrible fan expert software though). They are also pretty silent anyway  so I just tend to leave mine on full speed.
