What is an FC Link and an FC Bridge? I have no clue which one to buy of a single GPU set up. Please help.

eh how to explane it well... ist something that connects all the inlets and outlets of multiple gpus so you dont have to run tubes between them

But the image on the EK website shows the only in/outlets to be in the side that will face down. How can i solve this?

What water block are you talking about? I'm pretty sure you are mistaking something here.
