Should I turn on ambient occlusion globally in the Nvidia control panel or set it in each individual program. I was thinking if I enabled it globally it would just add it to whatever game was compatible and ignore the ones that say the game isn't compatible. Thanks!

There aren't a lot of settings I'd recommend enabling globally. Turn it on on a game-by-game basis, especially since so many games today offer their own ambient occlusion natively.

 

Yeah Vsync, and anisotropic filtering are about all I enable globally.
