Should be. An i7 3930k is around $550 and the two GTX 780s would be another $1300. That leaves around $700 for your case, PSU, motherboard, hard drives and anything else, which is doable.

What are the best specs for gaming and a bit of editing I can get for $2500 no peripherals or operating system. Would I be able to get 2 780s with a lga 2011 processor or only one of them?

You could get two 780s. Since you'll be gaming there won't be a whole lot of benefit to going with the X79 platform.

I'll also be doing a bit of editing I'll add that

Haswell will probably suit you better if you're only doing a bit.
