I currently have an ASRock H61M-VS R2.0 Mobo for work use connected to 2 screent.  I need 1 MAYBE 2 additional screens to more effectively and comfortably work.

There's currently a NVidia GeForce 210 video card installed in the PCI Express 2.0 x16 slot, so I have one open PCI Express x1 slot.  
I was curious to know if I could slap another GPU in there.  IF I can does it matter what brand/type I get (obviously as long as it's a PCI Ex x1 compatible card) or am I more or less stuck to one type/brand card?

Computer will be used for normal office use and occasionally watching YouTube videos; no (actual) games.

 

**Side Note: I've played around with the USB video adapters, they're too choppy for my liking. 

Also any video card recommendations I'll happily accept.  Again I don't need anything space-age, just a lil som'n to get it working.

They are £100 ish and they can support up to 6 monitors

Any insight on my primary question... Simply adding an additional card? 

I ask because I have existing towers that aren't being utilized.  I'd rather pull them from (and not spend a cent), rather than but a whole new video card.

 

Additionally, apparently to have more than 3 monitors, extra hardware and modification is needed, or at least that's my understanding from a quick Google info search.  Also, bare in mind I'm in the US ($).

is that additional slot a PCIe 1x ?

I am not sure about whether there is a PCIE 1x compatible card that support more monitors

For example an GTX 750 ( a lower end Nvidia GPU) supports 3 monitors

at AMD 270 is the first card that support more than 3 monitors

 

if you have a GPU that an support 3 (or more ) monitors there are no physical modification needed.

place 3 monitors next to each other, connect them to mains and to the PC with the appropriate cables, then it should be fine!
