So I'm on my last component. Since last week, I've been deciding what DDR4 I'm going to buy. My X99 build will be a gaming/recording for the next couple of months but eventually moving out into video editing and heavy photoshop use. My question is, should I get a 3000 g.skill ram or should I wait for prices to drop and buy a 2400 g.skill ram today?

If you are in a hurry you might want to get the 3000 ones else I would wait and buy the 2400. If you buy the 2400 now and wait for the price drop on the 3000 ones you would be paying almost the same amount of money you would have if you bought the 3000 now (since you bought both).

Ram speed is almost entirely irrelevant, just get whichever is cheaper/looks better.

 

Remember, ram performance is speed/cas, not just speed.
