Question about microphones

They use shotgun mics, they are extremely directional microphones and only pick up the sound that you point it at

so i watch a lot of youtube videos.  People like Rocket Jump that do really cool scripts.  And when i watch the Behind the scenes i notice they always yell stuff like "And jump out and roll and shoot" ect and in the final cut you dont here that suff but you still here the sounds that were being made when the actor rolled or fell or something. So my question is... are the microphones they are using only record sound that is directly in front of them or is it a software thing?

i think they have 2 mics, on one the actor and one for the ambient noise, and they overlay those 2 inputs and remove the ambient noise

 

thats just a wild guess tho
