what kind of simple fan controller with nobs that controls the fans using PWM are out there? I don't want anything flashy just a simple black controller.

Upgrade Plan: Acquire some Black Noctuas then add 16 or 32GB of 2133MHz memory

PWM sized connectors doesn't mean PWM control. The Sentry Mix uses voltage control.

 

The only PWM controller with multiple channels available is the Aquaero 6, but it is really a massive overkill for air cooling only. Your motherboard will have a PWM port on the CPU fan header (and a mirror on the CPU OPT header). So you can connect devices using a PWM splitter to those headers if you want the same control over all of them. There are also many controllers with a single PWM header in the $50+ range.
