PC upgrade timeline

Games, programs or workloads that it will be used for: AAA games, anything that I end up liking. At least high/ultra 1440p with at least 40-50fps, can use DLSS to get there, will be trying out raytracing. Buying one thing at a time, next up is the gpu as it's the most uplifting performance part of the pc. Buying the new gpu in January, part buys are going to be spaced out in 1, 2 or 3 month increments.
Other details (existing parts lists, whether any peripherals are needed, what you're upgrading from, when you're going to buy, what resolution and refresh rate you want to play at, etc):
PC:
Motherboard - Gigabyte B450 Aorus Elite V2
CPU - Ryzen 5 3600 OC'd to 4.5GHz 70ish Celcius under full load
CPU Cooler - Deepcool AG400
RAM - 2x8GB 2666MT/s CL19 OC'd with Ryzen Master to 3600MT/s, unknown timings, didn't do much than just set the speed to 3600. Sticks are mismatched, one is Samsung and one is Kingston.
SSD - SKHynix 256GGB M.2 + Crucial BX500 500GB Sata SSD
GPU - Asus ROG Strix GTX 1070 8GB
Case - Fury Shobo SH4F
PSU - Corsair RM850X (2018)}
Peripherals:
Keyboard - AJAZZ AK820 Pro
Mouse - Keychron M3 1K (A3)
Monitor - Lenovo R27qe
Speakers - Auna mini hi-fi speakers, hooked up via Motherboard 3.5mm output to pc from the hi-fi main unit.
Headphones - AKG K361 and Sennheiser HD558
My plan is: Get a RTX 3080 10/12GB, Get a Ryzen 7 5700x and a beefier cooler if needed, Get 2x16GB ram kit or add extra 16gb to my existing ram, depending on how the pricing will continue, Get a 1tb ssd (WD SN5000), Hopefully then I can get either a Fractal Design Epoch or HAVN BF360 Flow, Get a b550 motherboard to minimize pcie gen bottleneck (with wifi), then start getting better peripherals. Edifier MR4 Speakers, Incott G23 V2 mouse, don't know what keyboard yet, probably one for around 400-600zł, I can't really go custom as there's no custom keyboard places in Poland that I know of. Get a extra 1080p 27 inch monitor, and lastly a new desk to fit it all on.
If you have something to add or you could guide me to a better solution while staying on a budget I would be greatful.
Yuo won't have PCIe Gen bottleneck with a 3080, so don't buy a new motherboard for that reason.
Your plan is sound, in concept. Without knowing pricing in Poland in 3-6 months... we'll go with that.
I like how you're thinking though. May be that you get the SSD before the CPU, depending if the 3080 opens up more games for you. 3600 to 5700X may not provide the uplift once you get a 3080. Might want to look into AM5 then.
