I have usb Corsair Raptor HS40 and what i believe to be to HyperX Cloud Alpha III version.

I mostly use the HyperX headphones. They still sound fine, but the plastic is beginning to deteriorate.  I like the Corsair because they are usb and they are plenty loud, but they don't sound as good as the HyperX.  However, I use the SoundblasterX G6 with the HyperX to get the volume.   

Will I get as good of quality sound and good volume from Bluetooth?

Opinions on the best headset for gaming in general no matter the connection interface.

The options should be 200 and under.

Nice and comfortable for a large head also. I have 6'1 or so.

So every audio output from a computer has four thing's, a digital file, Digital to analogue converter, amplifier, and driver.

 

The usb headset you have is using it's own built in dac and amp, the hyperx is using the soudblaster to do all of the work.  So chances are it's the soudblaster which is keeping your hyperX from reaching the volume you perfer.

 

A bluetooth headset is going to have everything built in so it will depend entirely on what the manufacturer has done in order to power it, it will contain it's own dac and amp as well as a transmitter and battery.

 

My personal choice is to go separate headphone and mic because I tend to have bad luck with the TRRS connection and sound bleed.  Also if one piece goes then you don't have to get rid of the whole thing.  Also I prefer wired but I fully understand the draw of wireless solutions.

I don't typically have the USB version plugged in. Honestly I don't even use the microphones. 

 

I got the headphone amp because I didn't like the amp on whatever particular motherboard I had at the time. The volume just wasn't loud enough for me. If I remember correctly as far as The hyperX goes I bought them because I didn't really like the bass response on the hs40s Even though the general volume on the HS40s were louder. And I couldn't find a good total solution for Windows that I was happy with as far as an EQ.  I just wanted some real world opinions on good options I have read reviews and it seems like the hyperX always comes up toward the top. And it seems to play out with word of mouth reviews also. I just didn't know if there was any other options that I was missing out on. I I've also read about steel series but I'm not really sure which one would be comparable or better.

Honestly I'm not the one to talk to about gaming headset's because they usually have sound quality as a secondary concern.  There are good examples but most are tuned for gaming and not much else.  Since you don't use the mic very much perhaps you could just get a pair of headphones that will offer sound quality as a priority.  In the price range you listed I can think of the Rode NTH-100 (pads and headband are difficult to get), Fiio FT1 (I don't know much about this but it's supposed to be good), Mezze 99 Neo (typical V-shape and light weight, looks good too), Phillips Fidelio X2HR or X3 (the ladder is a warm signature with good soundstage and imaging with good ergonomics), HiFiman Sundara (I have bad luck with the brand), AKG K361 or 367 (the first wants better pads, build quality is a concern to some but I like it).

 

There are so many more good sounding options for audio grade headphones than there is for headsets.  If you want to get headphones I'm sure there will be some great advice that can be given.
