Which should I upgrade?

A 5700X3D + a GPU will give you a pretty good performance increase.

I would go with a 7800 XT.

Other details (existing parts lists, whether any peripherals are needed, what you're upgrading from, when you're going to buy, what resolution and refresh rate you want to play at, etc): Hi, I currently have a Ryzen 5 5600 CPU with 32gb DDR 4-3600 ram, and a RTX 3060 12gb GPU, I’ve been brought 2 new 1440p 180hz MSI monitors and would like to see my FPS in games like COD 6 reach upwards of 100, would it be more beneficial to upgrade my graphics card to a 4070 and change to a Ryzen 7 5800 or upgrade to AM5 architecture and stick with the 3060?

If you keep the same GPU aka the 3060 you'll bottlenecked by that especially on 1440p on shooters since that resolution relies more on the GPU

If you can find a 5700x3d and an rx 7800xt that be a great upgrade (considering you have a strong enough PSU

For £800 you can upgrade the CPU and GPU.

i had considered going for a 7800XT as well.

Then 5700x3d + 7800xt/4070

 

What cooler do you have? The stock one is NOT enough for the 5700x3d but luckaly heaps of cheap coolers available

That is a plenty good enough motherboard for a 5700X3D and the PSU can easily handle a GPU upgrade.

Remember that you might need a new cooler for the 5700X3D as the stock cooler for your 5600 will not be enough.
