Gpu workloads(renedring, editing, streaming))

Hello. General question to deepen my knowledge. 

I know that when it comes to workloads other than gaming, usually the gpu from nvidia performs better than one from AMD.

How would one define that difference? And how big is it?

 

Let's say I'm doing something in Davinci resolve. I have a system with the same specs except the gpu, one system has a 7800xt, the other a 4070.

How do you know which one does better?(especially if you have something like a 4060 against a 7800xt, which is much weaker?) Is it the fact that content creation apps revolve around CUDA cores? Or different/better encoding?
