A $2000 build should have better than a 4070 Super.  7900XTX or 4080 Super fits in that budget.

The rest of the parts are either over priced or they tack on a hefty build fee.

Use pcpartpicker.com and build the exact same machine to see what you would pay for all the parts. If the "fees" are acceptable to you, then buy it.

TLDR:  I wouln't pay $1991 for that machine, even with your money.

Btw, do yo have a Microcenter near you at all?

Edit:  WTF happened to 7800X3D pricing?!?!

Example of $2000 build, best CPU and 2nd/3rd best GPU...

That B650 Gigabyte Eagle comes with the old school 1G LAN. For $2000 the OP should have a board that includes a modern up to date 2.5G LAN.

Budget (including currency): ~$2,000

Country:  US

Games, programs or workloads that it will be used for: Modded Cities Skylines, Cities Skylines 2, Farming Sim, Transport Fever 2, Factorio, GTA V, House Flipper, Euro Truck Sim

Other details (existing parts lists, whether any peripherals are needed, what you're upgrading from, when you're going to buy, what resolution and refresh rate you want to play at, etc):

I've using my roommates desktop tower and want one for myself. I went to iBUYPOWER and priced one out. I'm looking to have a more white aesthetic build, something more than just all black or RGB. Also running on Windows 11, at least 2 possibly 3 monitors, no streaming, 3D modeling and printing.

Case: Lian Li Lancool 216 Mesh Front Panel RGB Gaming Case - White

Processor: AMD RyzenTM 7 7800X3D Processor (8X 4.2GHz/96MB L3 Cache)

Motherboard: ASUS Prime B650M-A AX6 WIFI - Wifi 6, ARGB Header (3), USB 3.2 Ports (1 Type-C, 3 Type-A), M.2 Slot (2)

That B650 Gigabyte Eagle comes with the old school 1G LAN. For $2000 the OP should have a board that includes a modern up to date 2.5G LAN.

Heres the white build, unless the 2000 includes the 2 or 3 moniters
