Are there any AI models that can be run locally that can scan almost several hundred pages documents and create a summary of desired information?

I'm looking into finding a way to efficiently scan a document to get information about walk-in coolers.

 

I work for a walk-in cooler company and we're looking for a better way to get information from these documents other than Ctrl+F. These documents come from customers, and the document is an overall/all-encompassing construction document, that includes everything needed to create a building, if I'm understanding this document thing correctly.
