So all I need to do is just need to factory reset and go through the setup process?

Yup!

Long story short, need to factory reset my phone in order to reinstall Samsung's Reminder app. However, I'm concerned that it would cause issues with my mobile carrier. Would factory resetting while the SIM is inserted cause issues?  I'm using a Galaxy Note8. Appreciate the help!

It shouldnt as youre resetting the phone itself not any non-built-in hardware, if youre worried though turn your phone off, remove sim card, reboot and reset then

It shouldn't, the SIM card is separate, all the phone does is read it and use it (to my knowledge)
