Can I also take the 7800x3d and the NZXT Kraken Elite 360 and I forgot to say that I also have an Samsung 990 Pro 2TB

You would be sacrificing non gaming performance with the 7800X3D. I suspect if you examine some gaming benchmarks you'll see that the actual performance difference between the 7800X3D and 7900X is not really significant in real world terms.

The kraken Elite 360 should easily fit in the case.

Budget (including currency): 2000€

Country: Austria

Games, programs or workloads that it will be used for: 3D Workbench and CPU heavy games

Other details (existing parts lists, whether any peripherals are needed, what you're upgrading from, when you're going to buy, what resolution and refresh rate you want to play at, etc): I have an H9 Flow and a ROG Strix x670e-a. What parts should I get with 64gb RAM and AM5.
