Do the speeds in the DDR5 ram really matter much? Pairing with R7 7800X3D

Maybe a bit of a non-answer, but it matters when it matters. The extra cache of the X3D models can help mitigate it for certain workloads, but not all. Personally I'd still aim to balance ram speed with cost for any build. Get fastest ram you can without paying silly money. Look for the sweet spot like 3600 was in the later DDR4 era.

Since you're getting the 7800x3d, it's not a stretch to get RAM that is on par.

 

6000CL30 or 5600CL28 is arguably the fastest RAM to get.

These results are for the non-X3D, so not directly comparable (because the X3D is less memory sensitive, in general), but anyway.
