Universal Email Format? (Backup)

So in preparation of switching my website to a new host, I have close to 20 years of email on my current host. What is the most universal way to back this up? (My primary OS is Linux, but I do have a Windows machine)

 

Should I log into Outlook and create a PST of this account? Mbox file for Thunderbird? Is there anything actually universal and would work across Windows, Linux, and Android?
