Yeah, that's completely fine. It will just hang out and not do anything. 

Hello, I have a 6700xt with two 8 pin ports, I currently have 2x6+2 cables plugged in. Both cables have daisychain attatchments, but I am using only one of the 6+2 per cable due to being recommended to have 2 cables plugged into PSU for gpu. Is it fine that 1 6+2 per cable isn't being used as my PSU doesnt have just 1 8pin to 8pin cable without the daisychain.

I'm not great with cable extensions. I know they can be a bit sketchy depending on the ones, though I don't know enough about those specific ones to say for certain either way. The fact it is 18awg cabling makes me think that it's not going to be amazing (the good ones usually are 16awg, and counterintuitively bigger number means thinner and less capable wire), though it could still be OK. I don't want to give an answer either way as for whether it's safe, though I'd just keep using your current cable setup personally.
