If all you're doing is plugging it in and booting windows to "test" the 6700xt to see if it boots. You shouldn't have any problems.

The issue you'll have is when you put the full system under load and the CPU and GPU start drawing max power, then you may get system shut downs due to the PSU's over current protection shutting down the system. This can sometime just be a simple shutdown and you can boot right back up, and it can somtimes be a pop + sparks + smoke and your system will not start back up.

If your system doesn't contain a mad power CPU like a  13900k you will be fine with a 550w for the 6700xt without an undervolt.
