Home server for gaming/nas/plex

Budget (including currency): $1500 USD

Country: USA

Games, programs or workloads that it will be used for: Dedicated server for Ark Survival Evolved Cluster (3-4 instances), Minecraft server, NAS, Plex server

Other details: Already have my old gaming PC as I just upgraded from (Ryzen 1600x, msi tomahawk arctic b350 motherboard, 16gb 3000mhz Corsair vengeance 2x8, gtx 1060 6gb, EVGA 750w supernova psu), I am open to selling existing parts to get components better suited to server use. Also looking for a Linux distro that would be good for this type of machine.

In my experience with Minecraft alone you want lots of RAM.  Also if running multiple game servers its probably useful to have lots of CPU cores too.

Router:  Intel N100 (pfSense) WiFi6: Zyxel NWA210AX (1.7Gbit peak at 160Mhz)
WiFi5: Ubiquiti NanoHD OpenWRT (~500Mbit at 80Mhz) Switches: Netgear MS510TXUP, MS510TXPP, GS110EMX
ISPs: Zen Full Fibre 900 (~930Mbit down, 115Mbit up) + Three 5G (~800Mbit down, 115Mbit up)
Upgrading Laptop/Desktop CNVIo WiFi 5 cards to PCIe WiFi6e/7

Yea I have been thinking about adding another 16gb to get to 32 gb while using my existing ram or just selling my existing stuff and buying 64 gb. Then upgrading my current CPU to a newer Ryzen processor like a Ryzen 9 5900. Which will probably require a motherboard upgrade. So it may be worthwhile to just start over and save the psu. But thank you for the advice!
