Other details (existing parts lists, whether any peripherals are needed, what you're upgrading from, when you're going to buy, what resolution and refresh rate you want to play at, etc): I already have a spare i7-8700K

I am planning on building a server PC for my general use (image hosting, web hosting, several game servers (AC, BEAM, GTA)). I'm looking for part recommendations. I have a spare I7-8700K lying around.

It doesn't take anything special to do any of that. Pick up an inexpensive midrange motherboard and some DDR4 to go with your 8700k.

A barebone office PC would also be a viable option for you, since you'd get the motherboard, power supply, and case in one purchase.
