I am planning to sell my current PC and build a new one. I wanna play in 1080p and sometimes in VR, the GPU needs to be able to support 3 1080P monitors and maybe a forth (just for showing speed and stuff on sim racing games).

I would suggest you look for a 4 x 8 kit and not use  2 x 8 kits. the kits are generally pre selected to  match and have much lower chance of any memory issues. using 2 kits to create 32 gigs is not the greatest idea.

I would also consider looking for the 5800X3D it will be far superior to the 5600 and still to this day gives even the highest ends CPU's a run for the money when gaming. Simply one of the best CPU's made to date.

I hit 700W on an i5 with a NHD15

as long as I am using the same memory there will be no problem, thats exactly what the companies do too.

I would rather go with an AMD cpu with an AMD gpu bc you can then extract more performance out of it.

I don't have a link but there is this AMD thingy in adrenaline that you can activate if you have an AMD CPU with an AMD GPU which makes the GPU run faster or something. I'm not exactly sure but I know it boosts performance.
