PWM gives you finer control and is recommended if your fans support it (i.e. have 4 pins as supposed to 3).
DC is a bit more vague, but still perfectly fine unless you want to tune your fan speed to perfection for some reason.

If your fan cable has 4 pin holes then that means they support PWM which I always recommend over DC. PWM allows a great customization where you can set the fan curve yourself (slower speeds and slow ramp up for sound, faster speeds and fast fan ramp up for thermals, etc).
