Since my current build will be 10 years old this April, I'm looking into building a new gaming pc. I live in Greece. The available budget at the moment is 800€ (but I can throw in about 100-150 more for better perfomance). The main purpose will be gaming and some light video/image editing (photoshop, Adobe lightroom and Illustrator and a few others). Some preferences about the build. A 3060 or 3060 ti or 3070 graphics card and not water cooled. And that's it. Ohh and the only thing I'm buying as far as peripherals are concerned, is a 144hz monitor (Resolution: 2560x1440).

Getting a 3060 or 3060ti within your budget is going to be very difficult if you need everything in a build.. You might have to settle for a AMD 6600 or the equivalent.
