Looking to see if anyone can find any incompatibilities or size constraints with current parts. and games that i may be able to run that i don't expect, also how future proof it is since I don't care to play games with low settings! 😄 also would want to know if I'm missing anything.

12100F is the only sub $100 that is worth it, use it with stock cooler to save money.

Super budget B660 board, 2x8GB 3200, because 2x16GB in a budget build is really a waste of money.

1TB NVME SSD instead of 500GB, 500GB fills up really quick.

6650 XT instead of RTX 3050, RTX 3050 is a horrible value product, do not ever recommend that GPU to anyone. For reference, 6650 XT is 55% faster than 3050 for cheaper or the same price.

The case is expensive for what it is, if you like it, who am I to judge.

Same quality low end PSU for cheaper and higher capacity.

Honestly, I have no idea about minecraft, I don't play it therefore I have no idea about the hardware required for a modded server.

But I do know server hosting is somewhat tasking, admittedly I didn't read the plus server part of your post.

So, I upgraded the CPU to a 6core CPU that is way faster than R5 5500, a bit faster than R5 5600.

About the RAM, maybe you need more RAM, I'm not sure about the whole server thing.

Also, to be clear, this build could run 1080p games at high fps.
