Second hand server enquiry

I am looking to buy a server such as HPE Proliant M350p G8 or Dell Poweredge T620. Is it possible to put a third party SSD in as a boot drive and also a third party NAS drive like Seagate Ironwolf or similar?

Absolutely. Just make sure you are using regular SATA drives and you're good to go.

SAS is fine too, if you're not using the onboard SATA controller.

PERC cards for those generation servers are trivial to flash into IT mode, so TrueNAS or Unraid can directly access the drives without the RAID controller as an abstraction layer.
