The only way you can use more than one external monitor with an M1 MacBook Air or M1 MacBook Pro is with the use of a DisplayLink adapter. DisplayLink is a hardware technology, so you can't just use the DisplayLink Manager software to add extra display outputs. Once you have one of those adapters you can use it in clamshell mode along with the native display output from the laptop. You'll just need to make sure the laptop is plugged into power.
