Hello, I'm using two samsung 970 EVO (one plus, the other one not) on a raid0 configuration. I've just installed windows and the read and write speeds are terrible.

anyone have ANY idea why this could be and how I could fix this?

I'm running a i7 9700k with 32 GB 3200MHz

Are you sure that result is for the RAID array? Those numbers along with the volume size look suspiciously like a 1TB mechanical hard drive.

well first, that might be true, I do have a 1TB hard drive but it comes from a 2012 mac and it's quite terrible, I wouldn't expect it to get those speeds, but if that is then I have another problem, being that the raid array isn't detected by the device.

Those speeds are exactly what I would expect from an old 1TB hard drive. Were you trying to install Windows onto the RAID array for some reason?
