I would like to build a NAS to use mostly as a plex server, and also for some desktop backups and as a personal photos cloud. I would only need to be able to stream on one device at a time at 1080p. This would be my first time building a NAS server.  Could someone please recommend a good build for this use case? Budget is $300-350. this does not include drives. I would also like to make this NAS as quiet as possible, so I would be willing to stretch the budget slightly for a quieter fan.

It doesn't take much to run a NAS, a basic one can be run off of a pi. I like to use used equipment, bonus points if you can find old enterprise gear to run it on 🙂. You can improve the noise of almost anything by upgrading to Noctua fans. I am currently running an old 16TB enterprise NAS with FreeNAS that I got off Craigslist for $100 with the drives included.
