If you wanted to go intel, a 10 core 10850k would probably be better than the 8 core 11700k.

Gotta disagree on the downgrade to an 10850K. 11700K is better overall, except in pure multicore workloads, but that's only because of the extra threads and the difference isn't even that much. 8c/16t is going to be plenty for virtually every scenario, especially gaming, so the 11700K is just a better choice, unless you have a workload that's will fully saturate 20 threads. It's not even cheaper to go with 10850K.

Do you already have a gpu ?

I would go with a 5800X over the 11700K. You would need to have a gpu though.

In that case you can go with any cpu.

If you want Intel I wouldn't bother with a 'K' variant. The 11700 and a B560 board is cheaper and will give pretty much the same performance. The i5 11400/11500 are the best value Intel cpu's though if you are just gaming.

This would save around $160 on the cpu/board and cooler. I would also take the WD Blue SN550 over the Sabrent Q.
