need some tips on GPU-Monitors

Hey guys planning on building a pc for a friend and had some doubts, specially with the GPU and monitors.
Build:

Ryzen 5 5600x

MSI PROVDH B550

2x8gb DDR4 3200mhz

Nvme m2 ssd

 

So those are the parts I have figured out, so my question now is what GPU should I get?

planned on having dual screen 1440p 144hz but is it really worth it? Will the monitors someway bottleneck the GPU? What kind of GPU can support this kind of setup?
