Need help picking a power supply

Budget (including currency):  Around 100 for power supply, either a little bit more or less depending 

Country: United States

Games, programs or workloads that it will be used for: Some heavy gaming, also a CAD/ video editing workstation

Other details: https://pcpartpicker.com/list/2jhdbh is the parts list I'm working with right now, but I don't know what kind of power supply I will need for this. I'd prefer if it was gold rated or higher but I understand with the budget for it, it'll be gold probably. I'm gonna use an old GTX 760 until I can find a 3070 since its not in stock right now.

I was looking at it, but I don't know exactly what power supply wattage to get, I saw people saying there were big power jumps on the 3070 every now and then, but I'll take a look again.

when they were doing the reviews of the 3080 and 3090, there were huge power spikes under heavy load.  I'd say aim for 750W with plenty of wattage available from the 8-pin and 12v rail.

No sweat, 750w should be able to run it all, it'll be close, but with a $100 budget, 750W gold is going to creep right up to the budget.

a 750-800 watt should suite you. but a single rail psu may interest you more.
