would I be able to use 1 VGA monitor as my centre monitor and 2 DVI monitors as the side monitors?

I wouldn't use VGA display in a surround setup..It is more unreliable in terms of image resolution and depending on the cable quality it makes a huge difference.

I have never tried it but I don't see why not. I mean if you have the monitors and want to try Surround/eyefinity to see if you like it. Go for it. But if your serious about Surround/eyefinity you can't go too budget or you will have a bad experience.

2 DVI and 1 VGA wont work in surround... it has to be all the same connectors/screens and stuff or else you wont get past the "activate all monitors" option in nvidia control panel ^^ i found that out the hard way :3 not sure  bout eyefinity though.., i do know that eyefinity is a bit more forgiving...
