Looks like a solid build.  Only thing I would probably change is the SSD and get a M.2 drive.

CPU:   Ryzen 7  5800x      CPU Cooler: Corsair H115i Pro       Motherboard:  Asus x570 TUF Plus      Memory:  64GB Corsair Vengeance DDR4-3600

GPU:  ASUS TUF RTX3080        SSD: Crucial P5 1TB  PCIe NVMe  Samsung 990 Pro 2TB           PSU: Corsair CX750       Case: Thermaltake View 71 TG RGB

Monitors: LG 34" Ultrawide    Samsung 28" 4k

I was planning on doing that but when the m.2 slot is populated , the 2 of the sata ports are disabled

Note:The motherboard M.2 slot #1 shares bandwidth with SATA 6.0 Gb/s ports. When the M.2 slot is populated, two SATA 6.0 Gb/s ports are disabled.

That is just terrible design. This doesn't sound future proof in the long run if you need to upgrade storage. Maybe different board with an M.2 so you can use the SATA when you want more space? Having a backup hard drive isn't a bad idea.

I fix computers for a government that is garbage. I'm also a certified security professional according to Comptia

Using my paycheck on computer parts and alcohol and since this is a tech form I'll help with computer stuff I guess

How many SATA ports do you need?

SATA ports?  You just need those for additional hard drive space.

If you have a lot of hard drives you want to put into the system than yes, I can see why you would want to choose a SATA SSD over a M.2.

But if you are only going to have one or two extra hard drives, then the M.2 is a more attractive option due to the raw speed over a SATA SSD.
