Im considering buying the Acer Predator Helios 300 as it's on sale right now on amazon, but my problem is that I live in Denmark, and thus have some extra letters (Æ, Ø, and Å) that won't be on the keyboard. Is there a way to make custom keybindings for them, ie. (AltGr + , = Æ), (AltGr + . = Ø), and such? Thanks

I don't think you need custom keybindings as you can add your country's keyboard in Windows 10. 

 

If you search for 'Language' in the Windows search bar, it should take you to a language setting page where you can add your preferred language.  Click on the one that is labeled with 'Default app language', 'Default input language', etc. and an options button will appear.  If you click that, you will be taken to a menu where you can add keyboards to the system.  If you have more than 1 keyboard, a menu button will appear at the far right of the taskbar where you can pick your keyboard (you can also remove the default keyboard if you don't want it). 

 

The only problem would be that the keys on the physical board won't be marked correctly.
