Home Server Build

Hello this is my first post. I have not built or messed around with computers much since college (12yrs) so still working on building my knowledge set back...

 

I am considering building a home server for the purpose of hosting multiple thin clients. I have a big family and will need four clients for kids plus at least one or two additional for me and the wife. I would like to have something capable of running basic windows/microsoft office, web apps, stream movies from PLEX, and maybe games if able

 

I think i would need a robust server to run everything and I am trying to figure out is it worth trying to build a server or just buy cheap comps for kids homework and build one powerful desktop?

 

Any suggestions on parts for a build are appreciated!
