As far as BIOS goes. if it's not broken maybe its best not to fix it. If something goes wrong then the motherboard may be left unusable.

Get your Windows install medium if you use Windows and install that sucker, make sure you got all updates before you move on. Then go to your boards support page at the MSI site, grab your drivers and install them. They may have instructions so pay attention. Go to Nvidia and get your 2060S drivers and if you have anything else that need drivers and don't got it automatically then go get those.

Now is a good time to enable any XMP and from there you can go game or work or do what the computer is meant to do.

The most important thing to change yourself will be ram speed. Enable XMP/DOCP (whichever your motherboard has) so that your ram is not stuck at 2133 or 2400 or whatever the stock speed is.

After that you can try changing ram speed and whatnot, but it's not important for the function of the PC.

X570 is ready for the 3900X out of the box, no need to update to get it to work.  There will be BIOS update instructions for when you do want to update it tho.

20c ambient is cool for a PC, you're more than fine.

Honestly, you build a PC and then use it.  Now if you want to talk about your build at all, it seems a little unbalanced. But I don't know exactly what you're using it for.
