    I think I understand now.

Personally, I think just get the 8700 and the 8gb of RAM.

The difference is there, but it's not life changing. A stock 8700 and a stock 8700k run about the same performance. And in order to get good OC gains on your 8700k, you'll need a strong cooler and a strong motherboard later. I feel a stock 8700 and overclocked 8700k will go "obsolete" pretty close to the same time, so I don't know that you'll be gaining too much.

Plus you'll avoid the hassle of swapping motherboards later.

there are roumors about ram prices going down in near future, so.. maybe ditch the ram idea for a while.

    yes
It looks good enough, you'll be able to play games at a very good quality and have a powerful PC for other stuff too.

Yes. I don't feel like the 2070 makes any sense because the performance gap between the 2060 and the 2070 is way too small in a lot of games. The only real area where the 2070 has a decent performance increase over the 2060 is in ray tracing. And I assume that isn't a big thing for you. The 2080 isn't great value but at least it distances itself from the 2060 and 2070 by a fair bit. A 2080 under 650 is something you should be looking for if you don't want the 2060. (Even if the 2080 is awful value it is the only option at that price range other than the radeon vii)

Trying to fit a suitable build under a budget. Which will be the deciding factor for choosing between a better CPU or GPU ?
