Some Servers have this - There are also Servers with SD-Card slots to store the install ISOs
For most applications hot-swappable drive bays are just better tho
It can do both, if you want to play 1440p i would strongly recommend a card with more than 8GB of VRAM
The 6700XT i mentioned has 12GB and is pretty cheap atm
yes its definetly possible for best performance you should use GPU passthrough, the last time i tried it (back in 2019) it was a lot of fiddling around but it should be pretty easy to pull off today

Dont put money in it every 100$ Laptop or Phone will perform better than this single core
It will be fine if you uninstall the old drivers and install the ones for the new hardware.
A fresh install is always recommended but not necessary if you havent modified you windows too much (e.g. Windows Registry)
