I know it is to long but i believe it will clear your doubt.
First i7 2mb more cache memory than i5, i7 has 4 extra thread. i7 has clock speed of 4.0 GHz on the other hand hand i5 has clock speed of 3.5 GHz, and i7 has hyper threading.
Now the question is why they are charging so much money only by increasing some little feature, is it worthy to pay and do you really need that, the answer is for what purpose you are using your computer. In short for gaming No, i 5 is enough. For video video editing Yes.
Thread : It is the order or sequence of instruction that tells the computer what to do next.
multi threaded processor : it is way to execute more than one thread at a time, there are two ways to do that.
        i) Simultaneous multi threading (smt) : In this case CPU alternates among different thread in form of time sharing
ii) Second way is to allocate each thread to each core , this way each actively executing  thread (instruction) is assigned to a single core, means 4
cores can execute 4 threads (instruction) at same time . ( HT = hyper threading)
Now you will say if each thread is handle by each core than why i7 4 cores have 8 threads , is it only for show off. than NO here hyper threading comes into play. Have you ever notice those CPU which are not having HT has same no. of cores and threads like Pentium 2 cores 2 threads, i5 4 cores 4 threads. But which support HT has twice no. of threads. i3 2 cores 4 threads, i7 4 cores 8 threads. Here using HT  technology each cores is executing 2 threads. that means instead of using 8 cores and 8 threads , 4 cores are executing 8 threads almost at same time. Which give slightly better increasing performance if you are using any software that uses or perform better in more cores because with HT each core acts like 2 cores means 4 cores is now acing like 8 cores . Now i am saying it is " acting "not " actually happening" So HT is better than no HT but still more cores win.
Now if you are playing games than you don't need extra 2mb cache , more than 4 cores ( most f the games are not optimized to use more than 4 cores), and you will not see much increase in performance with 4.0GHz over 3.5GHz but if you are using software like video editing or some thing which is core hunger hyper threading, extra cache memory and extra clock  speed is really wort to spend money.
