I wouldn't get a H100i with the Define R4 because of possible pump noise and that the NH-D14 is generally more reliable. As for the Kraken x60, it's quieter but you'd have to do a bit of case modding. Stick with the NH-D14 since it's a solid and quiet cooler.
If you really like the looks, you could get a Windowed R4 and the H100i but I personally wouldn't do it.

Looks good, but I few suggestions
1. Consider getting Dell UltraSharp U2412M monitor instead
2. Maybe use the H80i instead, it is a 120 mm radiator, but you will not having any problems fitting that and you can leave the sounddamping top on
3. Get the Samsung 840 evo instead if you find it
Sorry don't know what gpu card to get that are good for editing and gaming together

With the cache, it stores the files you access often onto the ssd for faster access.
It's not much more for a 250GB ssd: http://uk.pcpartpicker.com/part/samsung-internal-hard-drive-mz7td250bw
Get it if you think you are a speed freak. I've thought about it myself but it's just faster to put what you want to run quickly on the ssd instead of using a cache.

Not really. You could just overclock your gpu--which you should be doing regardless of what card you get.
Check out Msi afterburner if you haven't already. It's a simple to use and handy tool.

If you want to game at 1440p, get a 780.
For 1080p, a 7970 will max out nearly every game.

Only Nvidia cards use cuda cores. Luckily, you don't need them so you can get AMD cards that perform better for their price.
The 7950/7970 uses OpenCL.
It depends on what you're doing but 2 7950's in crossfire would be very powerful for rendering while a single 7970 would be able to max out most games at 1080p while leaving another slot for upgrades.
Whether you need more rendering power is up to you. How intensive is your work?

No the7950 & 7970 do not use cuda but does use opencl also it depends on your preference but your doing more for the work I would have to suggest 7970 which can be used for gaming

The NH-D14 beats some AIO coolers and rivals others while being nearly silent.
You might not like the colors while I don't mind at all. They don't call it the "King of Air Coolers" for nothing.
Fyi, I have one myself. Tip: Don't drop it on your toe.

Photoshop and Premiere Pro can both utilize OpenCL and Pinnacle Studio doesn't use cuda for acceleration.
It'd be more cost efficient to get a 7950/7970 instead of a 780.
Edit: Btw, why do you specifically want water cooling? Why not air?

Asus Sabertooth Z87 because of the 5 year warrenty (maybe a little out of the budget though)
MSI GD-65 Z87 Gaming if you want to stick with MSI also a little bit cheaper
I would recommend the Sabertooth because I am a Asus fanboy

Get a M-ATX case because you aren't going to benefit from a M-ATX mobo if you don't have a M-ATX case I recommend the 350d
